I first made this soup about 19 years ago, & was amazed at how simple & easy it was, as well as so full of flavor since it is made in the microwave. It really is good. Does not taste like it was made quick & easy. I made this recipe for Sweetest Day, when my then Boyfriend & now husband were dating. I wanted to make an impressive dinner, & this was the first course. I must have done something right, because today we are husband & wife. It has been a Family Favorite not just for it's flavor, but for how quickly it can come together in taste & presentation. Try it I am sure you'll agree.

Ingredients For microwave french onion soup

  • 2 lg
    onions(1 pound)
  • 1/4 c
    butter
  • 2 can
    beef broth(10 1/2 oz.)
  • 2 1/2 c
    cold water
  • 1 tsp
    sugar
  • 1 Tbsp
    burgundy wine
  • 2 Tbsp
    butter or margarine melted
  • 6 slice
    french bread
  • 2 Tbsp
    freshly grated parmesan cheese (more if desired)
  • dash of black or white pepper
  • 6 oz
    finely shredded swiss cheese

How To Make microwave french onion soup

    Peel cut in half and slice onions and set aside. Place butter in 3 quart glass casserole measuring cup. Microwave at HIGH until melted, about 1 1/2 minutes. Add onion slices, tossing to coat. Cover and microwave on high 6-8 minutes or until onions are tender, stirring at least twice. Blend in broth, water, sugar, wine and pepper. Cover and microwave on HIGH until heated through about 8 minutes.

    Brush one side of french bread with melted butter. Sprinkle with parmesan cheese. Place under broiler to toast.Ladle soup into six individual serving dishes. Top each bowl with toast and 1 ounce of swiss cheese.

    Place bowls in microwave oven in circular pattern. Microwave at high 4 to 8 minutes or until cheese melts and soup is hot.

    In going through old photos of some of the dishes I have made over the years, I came across this one of the French Onion Soup I made as the first course, so I am sorry there are no step by step pictures. I will take some pictures the next time I make it.
