My sons and I were hungry for Potato Soup, one afternoon, so I invented this recipe. Hope you all enjoy it!

Ingredients For leslie's easy potato soup

  • 6-8 md
    peeled,cubed potatoes
  • 4 Tbsp
    butter
  • 1 Tbsp
    olive oil
  • 1 tsp
    chicken bouillon granules
  • 1/4 tsp
    celery powder
  • 2 tsp
    chives, chopped
  • 1/2 tsp
    onion powder
  • 1/2 c
    onion chopped
  • 1 pkg
    bacon bits or
  • 1 c
    cooked cubed ham
  • 1 c
    water
  • 1 c
    milk
  • 2 c
    heavy cream
  • salt and pepper to taste
  • 1 c
    colby jack, or mild cheddar cheese

How To Make leslie's easy potato soup

    Melt butter in fry pan or heavy 3 quart sauce pan. Add olive oil, potatoes,celery and onions. Saute until onions are transparent and celery is almost tender.

    Add the water,bullion, celery powder, onion powder, bacon bits,and chives. Cover and cook over medium heat, stirring often, until potatoes are tender.

    Stir in heavy cream and milk. Simmer over low heat until soup is hot. Stir in 1 cup shredded Colby Jack cheese, salt and pepper to taste.

    Thicken, if needed with flour or cornstarch.

    If you're short on funds, milk can be used in place of heavy cream. Just thicken.
