grated cheddar cheese is nice in this soup . to change this soup to Broccoli and cheddar,add 2 bags of broccoli or 5 heads of broccoli instead of cauliflower and follow the same dictations.

Ingredients For cream of cauliflower

    head of cauliflower, small florets
  • 1 lg
    onion, chopped
  • 20 l
    water
  • 2 c
    chicken soup base
  • 1 qt
    18% cream

How To Make cream of cauliflower

  • 1
    saute onions with a little margarine add cauliflower,add water and soup base, bring to a boil and simmer until cauliflower is tender

    set off stove and puree , cool and finish the soup next day . put on stove bring to a boil and turn down to simmer and thicken with the standard amount of roux, let simmer for a least 20 min. or longer add cream and add cheese stir until melted serve
