I found this recipe in the reception room at the doctors office. I scribbled it down went home and made it. I was surprised it was really good and different. Just thought it was really healthy also.

Ingredients For african vegetable soup

1 Tbspvegetable oil
-
2 mdonion, diced med. size
-
1 to 2stalks celery, diced
-
1 mdsweet potato, cubed 1/2 in size
-
1/4 cchopped fresh parsley
-
4 cwater
-
128 oz. can stewed tomatoes
-
1 tspsalt or to taste
-
pepper, fresh ground to taste
-
1 tspturmeric, ground
-
1/2 tspdried thyme leaves
-
1/2 tspcumin
-
1/8 tspcinnamon
-
1/8 tspred pepper
-
1bay leaf
-
1 smzucchini, sliced 1/4 in.
-
115 oz. can garbanzos beans, rinsed and drained
-
2 ozuncooked macaroni, elbow or ditalini
How To Make african vegetable soup

1In 4 qt. saucepan heat oil, add onions, celery and sweet potato. Cook over medium high heat, stirring occasionally, until onions are tender (3-5) minutes).

2Add all remaining ingredients (EXCEPT) zucchini, Garbanzos beans and macaroni. Cook over high heat until mixture comes to a full boil (6 to 8 min.). Reduce heat to low. Cover and continue cooking for 15 minutes.

3Stir in zucchini,Garbanzos beans and macaroni. Cook, uncovered, over medium heat, stirring occasionally, until macaroni is done and zucchini is tender (8 to 10 minutes).
