Ingredients For vegetable minestrone soup

  • 2 Tbsp
    olive oil
  • 2 clove
    garlic, chopped
  • 1 lg
    onion, diced
  • 2 c
    diced potatoes
  • 1 c
    diced celery
  • 1 c
    sliced zucchini
  • 1 c
    cut green beans
  • 2 c
    shredded cabbage
  • 4 c
    beef broth
  • 2 c
    water
  • 2 c
    peeled tomatoes
  • 1 can
    (16 oz.) cannellini beans
  • 1/2 lb
    small shell pasta
  • chopped parsley and basil, optional
  • salt and pepper, optional

How To Make vegetable minestrone soup

  • 1
    Saute garlic and onion. Add potatoes and celery, cook for 5 minutes Add broth and 2 cups water, bring to a boil. Add tomatoes and simmer for 10 minutes Add zucchini, beans, and cabbage. Bring to a boil. Add parsley, basil, and beans. Simmer 10 minutes

    Stir in pasta and cook 8 to 10 minutes. Season with salt and pepper to taste.

    Let stand 5 minutes before serving. Garnish with grated cheese.
