This is my Dad's "recipe". He threw this together yesterday, and OMG it was good! I'll be making this soon, and may sub in salmon for the ham.

Ingredients For easy crockpot parsnip chowder

  • 4 c
    diced parsnips, fresh
  • 2 c
    carrots, fresh
  • 1 c
    mushrooms, fresh
  • 1 c
    celery, diced
  • 1 c
    onions, chopped
  • 1 1/2 c
    ham, diced
  • 1 Tbsp
    diced garlic
  • 1 can
    cream of mushroom soup, undiluted
  • 1 can
    cream of celery soup, undiluted
  • 2 c
    vegetable stock
  • 1 c
    milk
  • salt and pepper

How To Make easy crockpot parsnip chowder

    Dice/chop fresh vegetables and drop them in a 4 quart crockpot.

    Add undiluted creamed soups, milk, vegetable stock, garlic and salt and pepper.

    Simmer in crockpot until heated through and vegetables are done. It is best to start this in the morning and let it go all day. Enjoy!
