This is my mother-in-law's recipe. It's pure warm comfort food, she made it for me once when I was under the weather and I make it for my kids now. She was born and raised in Puerto Rico and said its been a staple since she was a baby.

Ingredients For nitza's rice soup

  • 2 c
    water
  • 1 c
    white rice
  • 2 Tbsp
    vegetable oil
  • 1/2 Tbsp
    salt
  • whole milk

How To Make nitza's rice soup

  • 1
    Rinse rice in colander, set aside. In a medium saucepan, bring water to a boil. Add oil and salt, then rice. Reduce heat to low, cover and simmer about 20 minutes, til water is absorbed.

    Add as much milk as needed to make a soupy consistency- about 2 cup, depending on how thin or thick you prefer.

    Simmer til milk is warm.
