Really good and very healthy. You can make it mild or spicy. I know you will love it. Its a great one pot dish.

Ingredients For chinese chicken noodle soup

  • 1 1/2 lb
    chicken thighs, skinless and boneless or breasts, i use both
  • 1 pkg
    matchstick carrots
  • 1 pkg
    brocoli slaw
  • 32 oz
    chicken broth
  • 32 oz
    vegetable broth
  • 1
    large onion, diced fine
  • 4 stalk
    celery, diced fine
  • 8 oz
    shitake mushrooms, fresh
  • 1/2 c
    soy sauce
  • 1 tube
    miso paste
  • 1/4 c
    shredded fresh ginger
  • 1 pkg
    lo mein or rice/buckwheat noodles, uncooked
  • 1 bunch
    green onions, sliced
  • 2 Tbsp
    black sesame seeds
  • 2 Tbsp
    coconut oil
  • 1 tsp
    sesame oil
  • 1 pkg
    wonton strips for salads

How To Make chinese chicken noodle soup

    cut your chicken into 1 inch cubes or strips
  • 2
    stir fry your chicken in the coconut oil and sesame oil
  • 3
    when chicken is halfway done, add, the onions, carrots, celery, mushrooms, ginger and half of the soy sauce
  • 4
    when chicken is done, add both of the broths, the miso paste and bring to a boil, reduce heat and simmer for 15 minutes.

    Now add the broccoli slaw and the noodles

    cook until noodles are done. If too thick, add filtered water or more veggie broth. Add more soy sauce if needed.

    serve with green onions, sesame seeds and wonton strips.
