Another easy recipe for us "lightly salted" gals! I made this one last night and it was gone before we all sat down around the table. I found myself adding about double the carrots, ham, and almonds. It amazing, but the crunchiest soup ever. I think next time I will leave out all the almonds. Like I said.... lightly salted.... YUMMY!

Ingredients For wild rice soup

6 Tbspbutter

1 smminced onion
-
1/2 cflour

3 cchicken broth
-
2 ccooked wild rice

1/2 cfinely grated carrots

1/3 cminced ham
-
1/2 tspsalt

1 c1/2 and 1/2

3 Tbspchopped slivered almonds
How To Make wild rice soup

1In a saucepan, melt butter and saute onion until tender. Blend in flour, and gradually add the broth. Cook, stirring CONSTANTLY, until mixture comes to a boil.

2Stir in rice, carrots, ham, almonds and salt. Simmer for about 5 minutes.

3Stir in 1/2 and 1/2, and heat to serving temperature. TAH DAH!
