An awesomely delicious chili type soup that I developed and the family adored. Layers and layers of flavor & its even better the next day. So easy too! Make it your own, by using what you have in your pantry, adjust seasonings to your liking, but what I used was so tasty! Enjoy!!

Ingredients For ~ one pot tasty pork chili soup ~

  • 2 lb
    ground pork
  • Salt
    and pepper for seasoning meat
  • 2 stalk
    celery plus leaves, chopped
  • 1 lg
    red bell pepper - seeded and chopped
  • 1 lg
    onion, chopped
  • 6 clove
    garlic, chopped
  • 1/4 c
    plus 2 tablespoons tomato paste
  • 1 - 2 can
    drained and rinsed dark red kidney beans
  • 3/4 c
    orzo pasta or another small pasta
  • 4 c
    beef broth
  • 1- 32 oz
    can plum tomatoes in juice with basil - squeezed between fingers into pieces
  • 1 tsp
    each - garlic salt, dried oregano, cumin, basil
  • 1/2 tsp
    celery seed and cinnamon
  • 1 Tbsp
    brown sugar
  • 11/2 Tbsp
    chili powder or to taste

How To Make ~ one pot tasty pork chili soup ~

    In a Dutch oven, over med heat, add 1 tablespoon olive oil, when hot crumble in the pork. Salt and pepper and cook until no longer pink, stirring often.

    Add onion, celery, red pepper and garlic, toss with meat and cook until veggies begin softening.

    Add the tomatoes and juice, tomato paste, beef broth, 1 tsp beef base, cumin, oregano, basil, chili powder, cinnamon, celery seed, brown sugar, garlic salt, orzo and beans. Stir to combine.

    Bring to a boil, then reduce to a simmer, cover and remain cooking for 40 - 45 minutes or until pasta is tender and soup has thickened some.

    I served with grated hot Pepper Jack cheese and a dollop of sour cream. Delicious!
