Ingredients For irish beef stew

  • 2 lb
    lamb or beef stew meat
  • 1 c
    frozen peas
  • 1/4 c
    olive oil
  • 2 c
    onions
  • 2 Tbsp
    minced garlic
  • 2-3 Tbsp
    tomato paste
  • 2-3 c
    guinness
  • 2 c
    each beef and chicken stock
  • 2 tsp
    thyme, dried
  • 2 lb
    red potatoes
  • 1 c
    carrots
  • 1 c
    savory cabbage
  • 1/4 c
    flour

How To Make irish beef stew

  • 1
    Brown meat in a large pot with 2 tablespoons of olive oil. Cook for about 8 minutes. Remove from pot and set aside.

    Add another 2 tablespoons of olive oil into pot add onions and sweat covered till soft. Stir in garlic and tomato paste. Cook for 2-3 minutes or until tomato paste darkens. Add flour and stir to coat cook for about a minute.

    Add Guinness beer scraping any bits from the bottom of the pot. Add both chicken and beef stock, browned meat, and thyme. Reduce heat to low and let cook for about an hour.

    Stir in potatoes and carrots and cook till tender about 20 minutes. Add peas and cabbage and cook till cabbage is tender.about 7 minutes. Serve in bread bowl.
