1bunch beets, peeled, halved and sliced

1 Tbsphorseradish

1 Tbspvinegar

4carrots, sliced

1 lgonion, diced

pinchpepper

1 Tbsplemon juice

3celery stalks, diced

beet greens, washed and finely chopped

1 cantomato soup
How To Make beet soup

1Put vegetables in a large pot with water to cover; add remaining ingredients and mix thoroughly.

2Simmer 2 - 2 1/2 hours, until beets and carrots are tender.
