Ingredients For thai style corn soup

  • 1/2 tsp
    sesame oil
  • 2
    scallions, thinly sliced
  • 1 clove
    garlic, crushed
  • 2 c
    chicken stock
  • 15 oz
    can creamed corn
  • 8 oz
    cooked, peeled shrimp
  • 1 tsp
    green chili paste (caution - will be hot!) (optional)
  • salt and pepper
  • cilantro leaves for garnish

How To Make thai style corn soup

  • 1
    Heat oil. Sauté scallions and garlic for about 1 minute until softened, but not brown.
  • 2
    Stir in stock, corn, shrimp and chili paste if using. (Wimp alert - start with 1/4 tsp and check for heat!!)

    Bring soup to boil, season to taste. Sprinkle with cilantro and serve.

    Variation: substitute cooked crab for all or part of the shrimp.
