Ingredients For hearty white-bean chili

  • 1 tsp
    safflower oil
  • 1 c
    chopped onions
  • 2 tsp
    chopped garlic
  • 1-4 oz
    diced green chiles
  • 1-15 oz
    can white or cannellini beans, drained and rinsed
  • 1/2 tsp
    each cumin, oregano
  • 1/8 tsp
    cayenne pepper (more to taste)
  • 1/2 c
    low sodium chicken broth
  • 11/2 c
    cubed chicken
  • 1 oz
    shredded low-fat pepper cheese
  • 2 Tbsp
    fresh cilantro
  • 4 sm
    slices cornbread

How To Make hearty white-bean chili

    In saucepot over medium heat, cook safflower oil 30 sec. or until heated. Add chopped onions. Cook 3 min. or until tender, stirring often. Add chopped garlic and green chiles. Cook 1 min.

    Stir in beans, fresh oregano, ground cumin and cayenne pepper. Add chicken broth.

    Increase heat to medium-high and bring to boil. Reduce heat to medium. Let simmer 10 min. or until thickened. Stir in chicken pepper-jack cheese and cilantro. Season with salt and pepper desired. Serve with cornbread.
