hamburger vegetable soup

I've always loved Vegetable soup but sometimes the large pieces of beef were tough or stringy and I disliked that. A special friend of mine made this soup one chilly evening and I've never made "the other" vegetable soup again. It's one of my favorite meals, served with hot corn bread and butter and sweet tea and this gal has a big smile on her face!

Ingredients For hamburger vegetable soup

  • 1 1/2 lb
    ground beef
  • 1 sm
    onion, diced
  • 1 can
    green peas, drained
  • 1 can
    black eyed peas, drained
  • 1 can
    carrots, drained (or you can use fresh, sliced)
  • 1 can
    potatoes, cubed, drained (or fresh cubed)
  • 1 can
    green beans, drained
  • 1 can
    corn, drained
  • 1 lg
    v-8 juice
  • 1 can
    beef broth
  • 1/8 c
    worcester sauce or three or four hard shakes
  • 3 lg
    tbs granulated beef broth
  • 1 can
    tomatoes, canned italian style with juice
  • 3
    bay leaves

How To Make hamburger vegetable soup

    Brown hamburger and onion. Drain and rinse and return to your pan, or add to your crockpot.

    Drain all your canned vegetables - do not drain tomatoes! If you use canned carrots and potatoes, it takes less time and it's really just as good. If you use fresh carrots and potatoes, you'll need to boil both of them to soften. If you use a crockpot, you won't have to do that. They'll get done in the long cooking time. Add to the hamburger mixture.

    Add all other ingredients, stir and cook on the stove, until boiling, and then set aside with lid on to "marry." OR, add to your crockpot and cook on low for 6 hours.

    Be sure and do not forget to add Worcester Sauce, Bay Leaves or broth. As far as the broth goes, I like to use the canned kind AND the granulated kind. But if you don't have the can of broth, make your own broth with EXTRA granulated kind and add water, enough to make approximately a campbell's soup can full. It'll work out fine.
