Great hearty soup that is simple to make. You could add andouille sausage for a stronger flavor, but I like the mildness of the smoked sausage.

Ingredients For white bean soup

  • 3 Tbsp
    vegetable oil
  • 1 c
    chopped yellow onions
  • 1/2 c
    chopped celery
  • 1/2 lb
    ham pieces or salt meat, chopped
  • 1/2 lb
    smoked sausage cut into 1/4 inch slices
  • 4 slice
    bacon, chopped
  • 3 can
    white beans
  • 3 can
    water or chicken broth
  • 1 can
    ro-tel tomatoes w/green chiles
  • salt, black pepper and cayenne pepper to taste

How To Make white bean soup

    Heat oil in large heavy pot over medium heat. Add onions, celery, salt meat or ham, sausage and bacon, cook until the onions are soft and golden, approximately 5 minutes.

    Add the beans, water or chicken broth and the tomatoes. Stir to blend. Bring to a boil, then reduce heat to medium-low and simmer uncovered for about 30 minutes, stirring occasionally.

    Season to taste with salt, black pepper and cayenne, but remember that the salt meat, sausage, bacon and tomatoes are salty and peppery. Skim off any oil that has risen to the surface. Serve hot. Makes about 10 servings.
