I have made this off and on for several years. We moved to this small country town in mid Iowa and are members of the local American Legion. They wanted to serve meat,cheese and crackers at their bar a couple nights a week. Well I made 8 rolls of this and it went over great. I now have a new job. Try it it is great.

Ingredients For boiled-summer sausage

  • 2 lb
    ground beef
  • 2 Tbsp
    morton's tender quick
  • 1/2 tsp
    garlic salt
  • 1/2 tsp
    onion salt
  • 1 c
    water
  • 1 tsp
    whole mustard seed
  • 1 tsp
    ground allspice
  • 7-8 dash
    liquid smoke flavoring

How To Make boiled-summer sausage

    Mix all ingredients. Shape into firm rolls. Wrap about 6 times in plactic wrap. Tie ends with twist ties, not rubber bands. Set in refrigerator overnight. Place in boiling warer: do not let water boil down. Addmore water if needed. Boil 1 1/2 hours without covering. Cool unwrap, slice and serve with your favorite chesse and crackers. Will keep in frig. for about 2 weeks if it last that long.
