A delicious and colorful side dish. Carrots and parsley are in the same plant family. If you leave parsley to go wild, it will form a root resembling a carrot. Carrots are low in calories, fats and salt. They are high in fiber and a good source of vitamin A.

Ingredients For sunshine carrots

  • 5 md
    carrots
  • 1 Tbsp
    sugar
  • 1 tsp
    cornstarch
  • 1/4 tsp
    ground ginger
  • 1/4 tsp
    salt
  • 1/4 c
    orange juice
  • 2 Tbsp
    butter ( or margarine )

How To Make sunshine carrots

  • 1
    Cut carrots on the bias in 1 inch chunks. Cook, covered, in boiling water till just tender, about 20 minutes; drain.

    In saucepan, mix sugar cornstarch, ginger, and salt. Add juice; cook and stir till thick and bubbly. Boil 1 minute. Stir in butter, toss with carrots.
