Ingredients For spinach pie

  • 2 Tbsp
    onion
  • 1 lb
    fresh mushrooms
  • 2 Tbsp
    butter
  • 2 lb
    fresh spinach..or 3 pks frozen
  • 1 tsp
    salt
  • 1/8 tsp
    pepper
  • pinch pinch
    freshly grated nutmeg
  • 8 oz
    swiss cheese, grated..
  • 3
    eggs
  • 1 1/2 c
    heavy cream, cold
  • 2
    pastry shells

How To Make spinach pie

  • 1
    Bake Shells in 375 (OVEN) 5-10 minutes, until brown.In frying pan brown onion in butter. put mushrooms in and saute.Add spinach,salt and pepper,nutmeg, until tender...DRAIN excess water...In LARGE bowl, add 3 eggs scrambles, heavey cream,swiss cheese,(save a little cheese for TOP).to this mixture add the spinach mixture and mix well..Put in baked pie shells.top with left over swiss cheese.BAKE 375 25-30 MIN..makes 2 pie's...we enjoy it..and leftover's are great,if there r any Left..
