alot of my friends have never eaten, much less shopped for an avocado,I'm sure there are alot of you with the same delema,so here are a few tips;always select one that are dark green,and without bruises.A ripe avocado is firm to the touch,but not hard.Be careful to avoid any the are too ripe(mushy)DO NOT BUY AVOCADO WITH BROWN SPOTS!

Ingredients For shrimp- stuff avocado

  • 2
    avocados
  • lemon juice, fresh
  • 1 c
    cooked shrimp
  • 1/4 c
    diced celery
  • 1/4 c
    diced cucumber
  • 3 lg
    scallions,sliced
  • 3 Tbsp
    lemon juice
  • salt and pepper to taste
  • 2 dash
    hot sauce
  • 3 Tbsp
    mayonnaise
  • 4
    lettuce leaves
  • 4
    parsley sprigs
  • 4 slice
    lemon (to garnish)

How To Make shrimp- stuff avocado

    Chill,Halve,and peel avocados,brush with lemon juice to avoid darkening.

    Devein shrimp,and chop

    In mixing bowl, combine shrimp, celery,cucumber,scallions,2 tbsp,lemon juice and salt and pepper.

    In a separate bowl, blend hot pepper sauce with mayonnaise.Add mayonnaise to shrimp mixture and gently mix.

    Arrange avocado halves on a plate on a bed of lettuce,and fill avocado halves with shrimp mixture.

    Garnish with sprig of parsley,and lemon slice.
