Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by my Aunt Irene.

Ingredients For scalloped corn

  • 2 c
    cooked whole kernal corn
  • 1 can
    cream of celery soup
  • 1 Tbsp
    minced onion
  • 1 dash
    pepper
  • 1 c
    crushed saltind crackers
  • 2 Tbsp
    butter
  • shredded cheddar cheese, optional

How To Make scalloped corn

  • 1
    In a buttered 1 1/2 quart casserole, arrange ingredients, in layers, in order listed, dotting butter on top.

    Bake at 400°F. for 25 minutes.

    Optional: Can be topped with shredded cheddar cheese, if desired, before baking.
