Ingredients For ratatouille

  • 1 1/2 c
    cubed eggplant
  • 1/2 c
    coarsely chopped yellow squash or zucchini
  • 1/2 c
    coarsely chopped tomato or package small tomatoes (yellow or red)
  • 28 oz
    can marinara sauce
  • 12 oz
    jar trader joe's red pepper spread with eggplant & garlic (optional)
  • 1/3 c
    coarsely chopped sweet red peppers
  • 1
    onion, chopped
  • 4 clove
    garlic, chopped
  • 1 pkg
    mushrooms
  • salt and pepper to taste

How To Make ratatouille

  • 1
    Add all ingredients to slow cooker except mushrooms and mix together. Cook on high 2 1/2 hours or low 4 1/2 hours. After finished add mushrooms which will cook as ratatouille cools.
