I remember having these when I was a child. Always a summertime, family get-together staple. Hard to stay out of.

Ingredients For pickled cucumbers and onions

  • 1 md
    cucumber, peeled and sliced thin (you can use an english cucumber if you prefer)
  • 1 md
    onion, sliced thin and rings separated
  • 3/4 c
    apple cider vinegar
  • 3/4 c
    sugar
  • 3/4 c
    water
  • salt and pepper to taste (start with about 1/2 t each)

How To Make pickled cucumbers and onions

    Place cucumber and onion in a medium bowl
  • 2
    Combine together water, vinegar, sugar, and pepper. Check salt and pepper, adjust if needed. Pour over cucumber and onion. (Be sure the cucumbers and onions are covered with the liquid.)

    Cover bowl and refrigerate for several hours or overnight. Stir occasionally.
