Got this recipe from the "Biggest Loser" cookbook seasons 1-3. Have actually made this several times. It's pretty good.

Ingredients For parmesan-roasted cauliflower

  • 1 1/2 c
    cauliflower florets
  • 2 tsp
    grated reduced fat parmesan cheese
  • 1 tsp
    chopped fresh parsley leaves
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    ground black pepper
  • salt to taste
  • 1 tsp
    extra-virgin olive oil

How To Make parmesan-roasted cauliflower

    Preheat oven to 425 degrees

    In medium bowl, combine cauliflower, cheese, parlsey, garlic powder, and pepper. Season with salt. Toss to mix. Drizzle on the oil and toss again. Transfer the mixture to a small non-stick baking dish.

    Bake 15-20 minutes, tossing once or until lightly browned and crsip-tender. Serve immediately.
