Blue Ribbon Recipe

Mashed potatoes are a standard favorite, but if you love turnips give this turnip mash a try. Boiling a potato with the turnips takes out the bitterness. The creamy mashed turnips are full of garlic flavor. Parmesan cheese adds a hint of saltiness. A unique and flavorful side dish.

Test Kitchen Tips
Be careful not to add too much garlic milk. You need just enough to get your preferred texture and flavor.
  • Dicing peeled turnips.
    1
Use a vegetable peeler and remove the skins from the turnips. Dice and place in a large pot (some turnips come with a waxy coating that will come off when peeled).
  • Potato in a pot with the turnips.
    2
Place the potato in with turnips (do not peel). This will get rid of the bitter taste of the turnips while they are cooking.
  • Water and salt added to the pot.
    3
Cover the turnips with cool water and place them on the stove. Add salt and bring to a boil. Reduce heat to medium and cover. Cook for about 15 minutes or until turnips are tender when pierced with a fork.
  • Draining cooked turnips.
    4
When the turnips are cooked, drain and remove the potato.
  • Mashing the turnips with 1 Tbsp of butter.
    5
Pour turnips back into the pot, add 1 Tbsp of butter, and mash with a potato masher.
  • Adding garlic milk to the mashed turnips.
    6
Mix the garlic and milk together. Stir in the garlic milk mixture a little at a time. You may not need all of the milk.
  • Stirring in 2 Tbsp of butter.
    7
Then stir in the remaining butter.
  • Stirring in Parmesan cheese.
    8
Gently stir and add in the Parmesan. Serve warm.
