Eggplant slices are sturdy enough to serve as the basis for a hearty vegetarian sandwich, and eggplant can be roasted and pureed into a silky, smooth dip.

Ingredients For panfried eggplant

  • 1 md
    eggplant
  • 1
    slightly beaten egg
  • 1 Tbsp
    cold water
  • 1/2 c
    fine dry bread crumbs
  • 1/2 tsp
    salt
  • 1 dash
    pepper

How To Make panfried eggplant

    Wash eggplant. Cut crosswise making 1/2 inch thick slices. Combine egg and water. Dip eggplant in egg mixture, then dip in mixture of bread crumbs, salt, and pepper.

    Cook eggplant in hot oil for 2 to 3 minutes on each side, or till tender and brown. Drain on paper towel. Sprinkle with additional salt.

    Keep warm in slow oven while cooking remaining eggplant.
