This is a delicious and healthy "pasta" dish. I've replaced regular pasta with zucchini noodles - so good! I hope you enjoy preparing and sharing this dish with your family and friends...with no guilt I might add. Nutrition Information at the bottom of recipe. Enjoy!

Ingredients For low carb sauteed tilapia with salsa over zoodles

  • FOR SALSA:
  • 1 c
    seeded and diced roma tomatoes
  • 1 sm
    avocado, diced
  • 1/4 c
    finely diced onion
  • 6
    spanish olives, sliced
  • 1
    jalapeno pepper, finely diced (optional)
  • 1 tsp
    minced cilantro leaves
  • 1 tsp
    lime juice
  • 4
    tilapia fillets
  • 1 tsp
    olive oil
  • FOR SEASONING MIX:
  • 1 1/2 tsp
    ground cumin
  • 1/2 tsp
    smoky paprika
  • 1/2 tsp
    salt and pepper
  • 1/4 tsp
    garlic powder
  • FOR ZUCCHINI NOODLES:
  • 2
    medium zucchini
  • 2 clove
    garlic minced
  • 1 tsp
    olive oil
  • pinch of salt and pepper to taste

How To Make low carb sauteed tilapia with salsa over zoodles

    Combine ingredients for fresh salsa in a small bowl. Refrigerate until ready to serve meal.

    Combine ingredients for seasoning mix and set aside.

    Using a vegetable slicer with a spiral cutting attachment make your "noodles". If you do not have this capability, you can use a food processor with a large grating attachment. A manual hand grater will do the job as well - you will just have a different shape zucchini. (: Place on paper towels or a clean tea towel and cover. Pat to remove as much excess liquid as you can.

    Heat a large skillet or sautee pan to medium high heat. Add olive oil and then zucchini - toss to coat. Cook for about 5 minutes. Add garlic and cook for another 2 minutes. Turn off heat and keep warm. You will salt and pepper just before serving. (if you would like) If you salt the zucchini too soon it will render a lot of liquid.

    Sprinkle reserved seasoning on both sides of tilapia fillets to taste.

    Heat a medium skillet to medium high heat. Add olive oil. Place fillets in skillet and cook 3-5 minutes until fillet is firm. Turn and cook another 2-3 minutes.

    To serve: Place 1/2 cup zucchini on plate. Top with a fillet. Spoon 1/4 cup fresh salsa on top. Enjoy!
