lola's green bean salad

Source: My mom's best friend, Lola. This recipe is simple, easy, healthy and a great side dish or salad. I love it with roasted or grilled chicken (check out my Beer Can Chicken recipe). The dressing for this recipe is also the same one I use for my Cucumbers and Onions.

Ingredients For lola's green bean salad

  • 1 can
    baby lesure peas, drained (1-10oz. pkg frozen baby peas, thawed can also be used)
  • 2 can
    french style green beans, drained
  • 1 c
    chopped celery
  • 1/2 c
    chopped green pepper
  • 1/3 c
    chopped onion
  • 1/4 c
    diced pimento (in jar) (have used diced red pepper when out of pimento)
  • 3/4 c
    sugar (can use splenda)
  • 1/3 c
    apple cider vinegar
  • 2 Tbsp
    water
  • 1/2 tsp
    salt, (optional)

How To Make lola's green bean salad

  • 1
    Mix together sugar (or splenda), vinegar, water and salt. Stir until sugar is dissolved. Set aside.

    Mix all vegetables together; pour dressing over vegetables and mix until combined. Cover and refrigerate until ready to serve.
