Kale or borecole is rich in numerous health benefits. It is very versatile and nutritious green leafy vegetable. It is a widely popular vegetable and is known for its low fat, no cholesterol but health benefiting anti-oxidant properties. As part of my eating “Lean and Clean for 2013”, Kale has become a major vegetable pantry item in my household. This recipe lightly steams the Kale which keeps its healthy benefits in tack without over cooking which will remove the healthy benefits/nutrients.

Ingredients For lemon pepper kale

  • 1 lb
    kale, washed, center stalks removed, chopped
  • 1 Tbsp
    mrs dash lemon pepper seasoning
  • 1/4 c
    fresh lemon juice ( about 1 small lemon)
  • 1 Tbsp
    fresh lemon zest
  • 2 Tbsp
    extra virgin olive oil
  • salt to taste ( himalayan pink salt) see note

How To Make lemon pepper kale

    Bring about 2 cups of water in a medium saucepan over high heat to a rolling boil.

    Add kale, cover and cook for about 3 – 5 minutes or until kale is tender and bright green, then remove from heat; let stand for about 2 – 3 minutes.

    Drain kale and place in a large bowl. Add lemon pepper seasoning, lemon juice, and olive oil. Toss gently, season with salt to taste and garnish with lemon zest.
