Ingredients For hill country squash casserole

  • 2 c
    grated, raw summer squash
  • 2 lg
    eggs, beaten
  • 1 c
    milk
  • 1/4 c
    onion, chopped
  • 1/4 c
    green bell pepper, chopped
  • 1 Tbsp
    sugar
  • 1/2 stick
    butter, sliced into small pieces
  • 1 c
    cheddar cheese, grated
  • 2 c
    ritz cracker crumbs

How To Make hill country squash casserole

  • 1
    Preheat oven to 350 degrees. Blend all ingredients except cheese and cracker crumbs. Mix cheese and crumbs together and add about 1/2 to squash mixture. Use remainder to sprinkle on top. Bake in greased casserole dish until mixture sets, about 45 minutes.
