I got this recipe from my neighbor's mother. She taught me how to make it. She was from Bavaria Province in Germany.

We loved the method for making this German cucumber salad. Slicing the cucumber very thin lets the salt draw out the natural juices. The dressing that is added is tangy, but the little bit of sugar helps to balance the flavors. Dill weed is a wonderful addition and elevates the flavors in this cucumber salad. A refreshing salad for summer.

Ingredients For german cucumber salad, a.k.a. gurken salat

  • 1 lg
    cucumber, peeled and thinly sliced
  • 1-2 pinch
    salt
  • 3 Tbsp
    apple cider vinegar
  • 1 Tbsp
    canola oil
  • 1 tsp
    sugar
  • 2 Tbsp
    water (optional)
  • 1/8 tsp
    dill weed

How To Make german cucumber salad, a.k.a. gurken salat

  • Slicing cucumbers very thin.

    Peel and thinly slice the cucumber.
  • Layering cucumber and salt in a bowl.

    Layer 1/3 of the cucumber in a large bowl. Sprinkle with a pinch of salt. Repeat twice until all the cucumber is in the bowl. Cover and let the cucumber rest for one hour. Refrigeration is not necessary.
  • Seasonings added to soaked cucumbers.

    After the cucumber has rested, stir the cucumber. Add the other ingredients. Stir to combine. Add water if needed. Stir to combine.
  • Ready to chill cucumbers.

    Chill for 30 minutes.

    Notes: You can use white vinegar if you prefer for a milder flavor. Enjoy!
