My dad loved to cook and this was one of his very favorite recipes. It was also a favorite of the whole family. There is never a holiday dinner that there is not a big bowl of "dad's peas".

Ingredients For french epicurian peas

  • 1/2 lb
    bacon,chopped
  • 1 sm
    onion, chopped
  • 1 Tbsp
    flour
  • 3 can
    16-oz. peas, drained
  • 1/4 c
    sweetened condensed milk (or more to taste)
  • 1 c
    evaporated milk
  • 1 can
    8-oz. mushroom stems and pieces
  • salt and pepper, to taste

How To Make french epicurian peas

  • 1
    Partially fry bacon, add onions cook until onions are tender. Add flour and blend stirring constantly. Add condensed milk and evaporated milk, stirring constantly until slightly thickened. Add mushrooms and peas, stirring gently to mix. Add salt and pepper to taste.

    Turn heat to very lowest heat setting, just to keep warm and let the flavors blend. About 30 minutes. Stir gently once or twice.
