This is another one of my Grandma Delleplain recipes. It can be a side dish but is good just as it is.

Ingredients For eggplant stuffed with ham

1large eggplant
-
1onion minced
-
1green pepper chopped fine
-
2 Tbspbutter
-
1/2 tspsalt
-
1/8 tsppepper

1 cham diced

2tomatoes chopped small

1 cbread crumbs

salted water
How To Make eggplant stuffed with ham

1Wash and dry eggplant and cut off slice from top. Scoop out the insides within 1/2" of skin. Cover shell with salted water and set aside.

2Chop eggplant pulp and combine with onions, peppers, and tomatoes. Cook in a small amount of boling water until tender. Dran and mash the eggplant pulp , then add butter, salt, pepper, and ham.

3Drain the shall well and fill with the mixture, sprinkle top with bread crumbs and bake in over at 350 for 25-30 minutes.
