This recipe complements any main meat or fish dish. And it's jazzy enough to serve with a holiday baked ham, turkey, or roast. It's easy and cost effective, and can be made in advance.

Ingredients For crunchy, cheesy cauliflower bake

  • cooking spray
  • 1
    head cauliflower separated into florettes and cooked 3-4 minutes in microwave
  • 1 can
    cream of celery soup, low fat, low sodium
  • 1 c
    reduced fat cheddar sheese, shredded
  • 1/2 c
    lite mayonnaise
  • 1 Tbsp
    chopped onion
  • 2
    large eggs beaten
  • 1 tsp
    kosher salt
  • 1/2 tsp
    black pepper
  • 1 Tbsp
    hot sauce
  • 1 c
    panko bread crumbs
  • 1 Tbsp
    butter

How To Make crunchy, cheesy cauliflower bake

    Pre heat oven to 350 degrees. Prepare baking pan with cooking spray and set aside. I use a soufflet dish but a 9x9 inch pan works fine. Combine all ingredients (from cooked cauliflower to hot sauce) in a mixing bowl.

    Mix ingredients well and pour mixture into prepared baking dish. Top with Panko and if you're feeling decadent, break apart a tablespoon of butter and add to the top of the bread crumbs. Bake uncovered 45 minutes

    Serve with any protein of your choice. Last time I made this, I served it with meatloaf and mushroom gravy.
