Creamy cucumbers are great for potlucks or a summer BBQ.

Ingredients For creamy cucumbers

  • 4
    large cucumbers, peeled and sliced thin
  • 2 tsp
    salt
  • 1
    tub of sour cream
  • 1/4 c
    lemon juice
  • 1 Tbsp
    spoon garlic powder
  • 1/2 c
    chopped scallions/green onion
  • freshly ground pepper to taste
  • 1/4 c
    fresh, chopped parsley

How To Make creamy cucumbers

  • 1
    Put cucumbers in a large, glass baking dish.

    Sprinkle salt on the cucumbers. Mix. Chill the cucumbers in the refrigerator.

    In a mixing bowl, combine sour cream, lemon juice, scallions, sugar, pepper,garlic powder and salt. Refrigerate.

    When both cucumbers and sour cream mixture are well-chilled, toss cucumbers with the sour cream mixture. Chill in refrigerator for several hours or overnight.
