This is a good side dish to go with just about anything. My family likes it because it is just a little different from the ordinary. The jalapeno pepper and cumin give it a little bit of kick.

Ingredients For creamy, cheesy corn and peppers

  • 2 lb
    frozen whole kernel corn
  • 1/2 c
    milk
  • 2 Tbsp
    butter
  • 1 lg
    bell pepper finely chopped
  • 1
    jalapeno peppers seeded finely chopped
  • 1/2 tsp
    cumin ground
  • 1/4 tsp
    ground black pepper
  • 1 tsp
    salt
  • 1 c
    graded sharp cheddar cheese
  • 3 oz
    cream cheese

How To Make creamy, cheesy corn and peppers

    In a large pot combine all ingredients except the cheeses.

    Bring to a boil over medium heat.

    reduce heat and simmer for about 30 minutes stirring often to prevent scalding.

    Add cheeses and stir until they are melted. remove from heat.
