Trying to eat light. Made my childrens fav eggsalad and they do not like crunchies in it! (celery, onions) I like the extra crunch in mine. So I always keep a ready bag shredded coleslaw mix in my refridgerator, It last along time and I make quick coleslaws, or top my sandwiches. This is what I came up with. Me and my son where happy, He got his creamy eggsalad sandwich and I got my lowfat cruncy tangy eggsalad sandwich!

Ingredients For coleslaw eggsalad on flatout bread

    hard boiled eggs
  • 2 Tbsp
    mayonnaise
  • 1 tsp
    dijon mustard
  • s&p
  • pinch onion powder
  • COLESLAW
  • 1 c
    premade coleslaw mix
  • 1 Tbsp
    chopped onion
  • 2 Tbsp
    white balsamic vinegar
  • s&p

How To Make coleslaw eggsalad on flatout bread

    I start by combining my coleslaw ingredients in bowl and set aside.

    In another bowl peel and chop hard boiled eggs and mix mayo, dijon, onion powder, and s&p to taste.

    Layer bottom of flat bread with eggsalad, top with coleslaw, fold and enjoy. Flatout bread is found in regular grocery store, about 90cals, and low in carbs. Very soft and tastey.
