This is my favorite eggplant recipe next to eggplant parmesan. So easy to make and so delicious! Great side dish to any roast.

Ingredients For cheesy baked eggplant

1 lgeggplant, peeled and diced

1 mdonion, sliced

1 tspworcestershire sauce
-
1 clovegarlic, minced

10saltine crackers, crushed
-
1/2 clight cream
-
1/2 cshredded cheddar cheese
-
1 Tbspbutter
-
salt & pepper to taste

1/4 cbreadcrumbs
How To Make cheesy baked eggplant

1Bring small amount of salted water to boil in saucepan and add eggplant and onions. Boil until tender, about 5 min. Drain and put in buttered casserole.

2Add cheese, worcestershire, garlic, crackers, cream. Add salt and pepper to taste.

3Dot casserole with butter and top with bread crumbs. Bake at 350 for 15-20 minutes.
