carrot salad with walnut,honey,lemon dressing

I created this while trying to come up with an easy carrot salad for my Dad. It is simple, and very versatile. I can see additions of favorite vegetables to your families liking. I would also add some crushed walnuts, but Dad doesnt like them "in things" :) I used what I had on hand, but I think white raisins would present better. The dressing just blends the flavors to perfection. Something different to serve instead of the same 'ol same 'ol. Very tasty indeed!

Ingredients For carrot salad with walnut,honey,lemon dressing

  • FOR THE DRESSING
  • 4 Tbsp
    walnut oil. (can use canola,but i used walnut)
  • 4 Tbsp
    lemon juice
  • 2 Tbsp
    honey
  • 3 tsp
    snipped chives (or use a small amount of onion)
  • 1/2 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1 tsp
    celery seed
  • FOR THE SALAD
  • 4 c
    shredded carrots
  • 1/2 c
    raisins (can use golden)
  • add walnuts and anything else that strikes your fancy!

How To Make carrot salad with walnut,honey,lemon dressing

    FOR THE DRESSING: Mix walnut oil,lemon juice,honey,chives,salt,pepper and celery seed together until the honey is well blended into the mixture. Set aside.

    Shred your carrots (about 8 medium)
  • 3
    Add the raisins to the shredded carrots and pour dressing over. Tada! Done! :)
