Burgers come in many forms but have you had a beet burger before? If not you should give this sweet and smokey spice burger a try--rich and a slight salty flavor.Recipe idea from lesauce.com.and Rachel from benevolentbites, and a little tweaking by me.

Ingredients For burgers with a beet

  • 1 c
    finely ground cashews
  • 1 or 2 clove
    cloves of garlic
  • 1 c
    grated raw red beets, packed
  • 1/4 c
    finely minced celery
  • 2 Tbsp
    minced onion
  • 1/2 c
    cooked brown rice
  • 1 tsp
    ground sunflower seeds or flaxseed's
  • 1 tsp
    each of dried oregano, dried chive, chili powder
  • 1/4 tsp
    each cumin and liquid smoke
  • 1/8 tsp
    ground black pepper

How To Make burgers with a beet

    Place beets in a large bowl. Add the garlic to a food processor and pulse to chop; add cashews and pulse until meal is formed. Add this mixture to the beets.

    Add all remaining ingredients into the bowl with the beet mixture and combine by mashing with a fork of pastry blender- this helps the beets release some of their juices. and is crucial to getting the perfect consistency. If the mixture seems to dry a a bit of red wine or orange juice.

    Form into 4 patties.Place Pre-heat a non-stick skillet-or cast iron skillet- that has been sprayed with not-stick cooking spray (this prevents the beets from sticking because of their high natural sugar); over medium-high heat, then turn down heat to medium before adding the burgers.

    Cook burgers about 5 minutes on each side,turning gently. Serve on whole wheat bun. Add lettuce and lemon sour cream and avocado slices for garnish ,if desired. Enjoy! --- Note: I think I will add about 1/4 cup of sour cream or yogurt the next time I make these-instead of the wine. . The texture will be better-In my opinion...try it both ways.
