This dish makes a great Lenten meal, very filling and nutritious. The Bisquick makes its own crust, like magic. Who can resist broccoli and cheese? Extra yummy!

Ingredients For ellen's broccoli puff

  • 2 pkg
    (10 oz. ea.) frozen chopped broccoli -- or -- 1 lg. bunch fresh broccoli, chopped
  • 1 c
    all purpose baking mix
  • 1 c
    milk
  • 2
    eggs
  • 1/2 tsp
    salt
  • 1 1/4 c
    cheddar cheese, shredded

How To Make ellen's broccoli puff

    Cook broccoli as directed on package; drain.

    Beat baking mix, milk, eggs, and salt with hand beater until smooth.

    Stir in broccoli and 1 cup of the cheese.

    Pour mixture into a 5-1/2-cup souffle dish or a 1-1/2-quart casserole that has been buttered.

    Bake, uncovered, at 325 degrees until knife inserted halfway between center and edge comes out clean--about 1 hour. Top with remaining 1/4 cup cheese and return to oven for 5 minutes, or until cheese is melted. Serve immediately.

    May substitute 2 (10 oz. ea.) packages frozen corn or frozen spinach for the broccoli.
