Recipe Source: Taste of Home Bonus Book-June/July 2007. Healthy version for onion rings when you want the real thing but not the fat. The first time I made these I left out the thyme because I thought I wouldn't like it. Trust me, don't leave it out, it really does bring out the flavor of the onion. These are a little messy and a little time consuming but worth it. Pass the ketchup and Enjoy!

Ingredients For baked onion rings

  • 1 lb
    sweet onions
  • 3
    egg whites
  • 1 c
    dry bread crumbs
  • 2 tsp
    dried thyme
  • 1 tsp
    salt
  • 1 tsp
    paprika
  • 1/4 tsp
    pepper

How To Make baked onion rings

    Cut onions into 1/2 inch slices; seperate into rings and place in a bowl. Cover with ice water; soak for 30 minutes. Drain

    In a small mixing bowl, beat the egg whites until foamy. In another bowl, combine the bread crumbs, thyme, salt, paprika and pepper. Divide the crumb mixture among three large resealable plastic bags. Dip a third of the onions in the egg whites; add a few rings at a time to crumb mixture and shake to coat. Place on a baking sheet coated with nonstick cooking spray. Repeat with remaining onion and crumb mixture. Bake at 400 degrees F. for 20 minutes or until lightly browned and crisp.

    NOTES: I found the plastic bag method was not for me. I put the crumb mixture on a large paper plate and dip the onion rings in the crumbs. (not wasting 3 plastic bags either.) Also, I use parchment paper to bake the onion rings on, to eliminate the cooking spray.
