Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by my Aunt Evelyn.

Ingredients For aunt evelyn's broccoli casserole

  • 1/2 c
    chopped onion
  • 1/2 c
    chopped celery
  • 1/4 c
    butter, melted
  • 1 can
    cream of mushroom soup
  • 1 pkg
    (10 oz) frozen broccoli
  • 1 c
    boiling water
  • 1 1/2 c
    minute rice (use as is, not prepared)
  • velveeta cheese (most of a small package)

How To Make aunt evelyn's broccoli casserole

    Mix all ingredients together. Put in casserole dish

    Bake 45 minutes at 350°F.
