Ingredients For alan's squash casserole

  • 3 lb
    yellow squash chopped
  • 2
    onions chopped
  • 2
    carrots chopped
  • 2 can
    cream of chicken soup
  • 1 c
    sour cream
  • 2 Tbsp
    pimento
  • 1/2 c
    butter, melted
  • 1 pkg
    small pkg herb stuffing mix (not cubes)

How To Make alan's squash casserole

  • 1
    Cook squash, onions, carrots in boiling water until tender. Drain.
  • 2
    Add remaining ingredients except butter and stuffing mix.
  • 3
    Combine butter and stuffing mix. Place half in bottom of a greased 2 quart casserole. Top with squash mixture. Top with remaining buttered stuffing.

    Bake 375 degrees for 45 minutes.
