1 smzucchini, sliced

1 jar(26 ounce) roasted garlic sauce

grated parmesan cheese

3/4 lbpenne pasta, cooked according to package directions

1Heat the olive oil in a large deep skillet. Add onion and saute until soft. Add eggplant and zucchini and saute until just cooked (al dente).

2Stir in roasted garlic sauce and heat through. Serve over cooked pasta and top with grated cheese.
