  • 1 Tbsp
    olive oil
  • 1 md
    onion, chopped
  • 1 md
    eggplant, peeled and cut into bite size pieces
  • 1 sm
    zucchini, sliced
  • 1 jar
    (26 ounce) roasted garlic sauce
  • grated parmesan cheese
  • 3/4 lb
    penne pasta, cooked according to package directions

How To Make penne pasta with roasted garlic sauce and veggies

    Heat the olive oil in a large deep skillet. Add onion and saute until soft. Add eggplant and zucchini and saute until just cooked (al dente).

    Stir in roasted garlic sauce and heat through. Serve over cooked pasta and top with grated cheese.
