no fat colorful cole slaw with blanched broccoli

I am not particularly fond of broccoli but I know it's nutritional value so I try to snack on it. It helps to curb my hunger plus I feel good that I didn't grab salted chips, sugary cookies, or fattening snacks that don't satisfy. With them blanched you can use your imagination on ways to eat them. Today I added a few to my totally healthy no fat slaw recipe. Hope you will enjoy it.

Ingredients For no fat colorful cole slaw with blanched broccoli

  • 1
    fresh broccoli for blanching.
  • 2
    bell peppers, red & yellow
  • 1 sprig
    broccoli to add to the slaw
  • 2 Tbsp
    vinegar
  • 3 Tbsp
    dill pickle juice
  • Dash
    blk pepper
  • Dash
    cumin
  • Dash
    paprika, sweet mild
  • 1 Tbsp
    peppercini with juice
  • 1
    quarter cabbage
  • Dash
    lime juice
  • 1/2
    green apple

How To Make no fat colorful cole slaw with blanched broccoli

    Heat water filled at 3/4 level in a stainless steel saucepan to boiling. While waiting for boil. Rinse with cool water the fresh broccoli. Then Cut into large portions. Add to water. Boil for 5 minutes ONLY. Then remove and drop into another pan filled with ice cold water & ice cubes to stop cooking process immediately. Set in freezer 5 minutes. Then set in lg. bowl in refrigerator. Your done blanching. Set aside. You won't add the sprig until finished making the slaw.

    Quarter cut, then Shred cabbage, peel Apple and julienne slice very small the bell peppers and Apple. Add to cabbage. Sprinkle with vinegar, red beet juice, lime, pickle juice, and seasonings.

    Toss thoroughly flavoring completely. Then add sm. Sprigs of blanched & cold broccoli. Toss again and refrigerate until needed as a side dish.

    Optional: sliced celery or slivered almonds would also be good but I didn't have any when making mine. Not sure about celery seed but you could try it.
