Ingredients For eggplant casserole

  • 1
    eggplant, peeled and cubed
  • 1 Tbsp
    lemon juice
  • 1/4 tsp
    black pepper
  • 1/2 c
    milk
  • 1/2 stick
    oleo
  • 1 sm
    onion, chopped
  • 1 c
    cracker crumbs
  • 1 c
    cheese
  • 1
    egg, beaten
  • 1/2 c
    bread crumbs

How To Make eggplant casserole

  • 1
    Boil Eggplant in salted water for 8 minutes. Drain and add remaining ingredients except bread crumbs. Pour into casserole dish, sprinkle with bread crumbs and bake for 30 minutes in a 350 oven.
