Okra is a staple in the South especially when it is in season. We do it all kinds of ways, fried, stewed with tomatoes, pickled, sautéed, pretty much any way we can think of. Bubba thinks that okra is slimy so I've had to come up with ways to make it not slimy. This is one of the ways. NOTE: Over-stirring and overcooking is the way okra gets slimy.

Ingredients For carrie's southern okra

  • 2 c
    fresh okra, cut in slices
  • 1 lg
    onion, chopped
  • 2 md
    red bell peppers, chopped
  • 1/2 c
    butter
  • 2 c
    choped fire roasted tomatoes
  • 2 Tbsp
    sugar
  • 2 tsp
    flour
  • 1 tsp
    salt
  • 1 tsp
    black pepper

How To Make carrie's southern okra

    Cook okra in boiling water for 10 minutes, drain.

    In a large skillet brown onion and red bell pepper in butter.

    Add tomatoes and cook slowly for 5 minutes.

    Stir in okra, sugar, flour, salt and pepper. Cook over low heat until vegetables are tender, stirring as little as possible. NOTE: over stirring is what makes okra slimy.
