This recipe was created from rice left over from another meal. I remembered that as a kid, when ever mama had rice left over or was out of macaroni she would often make a Rice & Cheese dish very similar to Macaroni & cheese, the only difference was that she used rice instead. Finding a recipe for Macaroni & Cheese with White Sauce in one of my cookbooks titled "THE BLACK FAMILY REUNION COOKBOOK" The National League of Negro Women, reminded me of the one mama made using rice. This is the guide I used to create my recipe similar to the one mama made using left over rice that we loved so much

Ingredients For rice & cheese dish-just like mama's

  • 3 c
    cooked rice, (i used minute rice)
  • 4 Tbsp
    butter, divided
  • 1 md
    onion, chopped
  • 3 Tbsp
    all-purpose flour
  • 2 c
    milk (i used 2%) mama always used evaporated
  • salt & pepper according to taste
  • 2 Tbsp
    chopped chive (plus extra for top)
  • 2 c
    sharp cheddar cheese adds depth in flavor(or cheese of your choice)
  • 1 c
    mild cheddar cheese

How To Make rice & cheese dish-just like mama's

    I am giving you the details of what I used to create this great tasting recipe. Preheat oven to 325 degrees F. Spray 2 quart baking dish with non stick cooking spray. Melt 1 tablespoon of butter in medium sauce pan, over medium high heat add chopped onion, and sauté for 5 -7 minutes until onions are transparent. This is where the original recipe came from.

    Add remaining butter to sautéed onion and flour, stir until butter melts, and flour begins to cling to chopped onions.

    Add milk to large measuring cup, and throw in the salt & pepper or steak seasoning, I used a teaspoon. Then add to sauce pan and stir until milk begins to thicken. Once it thickens remove from heat.

    Add 2 cups of finely shredded sharp cheddar cheese, and continue to stir until cheese melts. Once cheese is melted, add the cooked rice and stir till blended together.

    Layer half of rice mixture in prepared 2 quart casserole dish.

    Top rice mixture with half of mild cheddar cheese. Add remaining rice mixture, and top with remaining mild cheddar cheese. Sprinkle on chopped chive, and bake in preheated oven for 25-30 minutes or until hot and bubbly. Serve while still hot.
