This is a superior garlic mashed recipe! I prepared them the first night and served as a side to a ribeye steak - delicious! We had them for leftovers the next night with pork chops and they might have even tasted better!

Ingredients For garlic mashed potatoes with parmesan

  • 1
    head garlic
  • 2 lb
    (about 4 large) red potatoes, scrubbed and unpeeled
  • 2 Tbsp
    butter
  • 2 Tbsp
    sour cream
  • 2 Tbsp
    milk
  • 3 Tbsp
    parmesan cheese
  • 4
    green onions, chopped (including green stem)
  • 1/4 tsp
    coarse ground black pepper
  • salt, to taste

How To Make garlic mashed potatoes with parmesan

    Cut 1/4-inch off head of garlic and discard. Wrap garlic in foil and roast in 400 degree F. oven for 40 minutes.

    Meanwhile, place potatoes in large pot and cover with water. Heat and boil about 20 minutes or until tender; drain.

    Slightly mash potatoes and add butter, sour cream, milk, Parmesan cheese, green onion, pepper and salt to taste. Continue mashing until smooth. Serve hot.

    Squeeze roasted garlic from head and stir into potato mixture.
